Coriander, Chilli, Turmeric, Fenugreek, Cumin, Channa Dal, Black Pepper, Urad Dal, Salt, Mustard, Curry Leaves, Cardamom, Nutmeg, Kapok Buds, Cloves, Cinnamon, Bay Leaves

Vegetable Masala (To serve 4 persons) – Ingredients: Carrot – 50g, Beans 50g, Cauliflower 50g, Potato 75g, Tomato 2 nos, Onion 3 nos, Green chilly 2 nos, Few curry leaves, few sprigs of coriander leaves for garnishing, Melam Vegetable Masala – 2 tbsp, Oil – 2 tbsp, Coconut Milk – 1 cup.

Method:

  • Heat oil in a kadai.
  • Add onion and saute till it changes to light brown.
  • Add green chillies, cubes of vegetable and sauté for 2 mins.
  • Add Melam Vegetable masala and saute for 2 mins.
  • Add tomatoes, salt to taste and water as required.
  • Allow vegetable to boil well and become soft.
  • Add coconut milk and allow simmering.
  • Remove from heat and garnish with coriander leaves and fried curry leaves.
